Homemade Tomato Soup

HOMEMADE TOMATO SOUP
 
4 to 6 cups pureed tomatoes
1 large onion, pureed with tomatoes
5-8 stalks celery, pureed with tomatoes
3 chicken bouillon cubes (or equivalent)
2 cups water
1 cup sugar
1 Tbsp. garlic powder (more, or less to taste)
2 Tbsp. salt (to taste)
Pepper to taste
1 stick of butter, melted
¾ cup corn starch  
 
Using a food processor or blender, puree the peeled tomatoes,
the onion and celery.  Bring first 5 ingredients to a boil in a large
pot.  Lower the temperature to just barely boiling and cook for
15 minutes, stirring frequently. Add the next 4 ingredients.  Mix the
corn starch with the melted butter.  Add several spoonsful of the hot
 tomato mixture.  Stirring briskly with a whisk, add the roux until the
 soup thickens nicely.  You may need a bit more melted butter with
corn starch. Taste and adjust the salt, garlic and pepper.
At this point, if you want to bottle the soup, place in sterilized jars
and process as you would tomato juice-30 minutes in hot water bath.
If you are going to serve this right away for a meal, add 1 or 2 cans
of evaporated milk, or a pint of heavy whipping cream. 
IDEAS: Add dried or fresh basil.  Add some chili powder or paprika
 powder for a nice ‘kick’. Try tabasco sauce and/or Worcestershire
 sauce.

There are several pear trees that we need to pick this week ASAP! 

Call, text or email me if you are able to pick pears on...

The first Pear Tree priority is in Cottonwood Heights - just 7 minutes from the Holladay Gardens.
This is my mother's home (approx. 2700 E. 7400 So. in back of the Cottonwood Heights Rec. Ctr.).  I'll give the exact address to those who come.
IF you have your own ladders, let me know.

Otherwise....
I need workers to come to my home in Holladay, pick up some harvest, take some ladders & buckets, drive 7 minutes to the Cottonwood Heights Pear Trees.

Then when you are done, bring the ladders and produce back to my home and leave from there.
Everyone who helps will get lots of delicious pears and a bunch of other produce.

Inversion Table - I need one temporarily

I hurt my back a little when I fell a few weeks ago.  It's healing but my Chiropractor suggested I use an inversion table. I want to try it out before buying one to see if this is something I should invest in.  Let me know if you have one I could use for a week or two OR have one that you are interested in selling.

Thanks for your patience.  I'm back from Florida now.  Just in time to start harvesting a lot of food!

I have updated the GARDEN CALENDAR for the next several weeks.

Take a minute to click on the link above and look at it.  Let me know when you would like to come help us in the gardens and pick up some food.  You'll love this delicious harvest that is ripening quickly!

Remember, we need your help with harvesting this food and/or some light garden maintenance.


If you are also interested in doing a "bagel pickup" from Riches Bagels during the week, let me know. Flexible schedule for picking up the food.  It then needs to come to my home in Holladay, after you have taken what you would like.

Besides having a lot of harvest that still needs to be picked up SOON, I just picked up a TON of food from Meier's Catering.

ALL of this food needs to be gone, from my home, Holladay A Garden, within the next 24 hours!!

By 4 pm Friday, I hope to have it all distributed so act SOON!

Thursday, Aug. 2: Harvest Distribution in Holladay

We still need your help in the gardens - lots of harvesting and weeding to do nearly every day.
In the meantime, if you have helped us this year in any of the gardens and haven't picked up food yet, please come and get some!

Email, text or call me before coming to pick some up, anytime Thursday, Aug. 2nd, Holladay A Garden,, preferably in the morning, before 9 am when it's still cooler outside but anytime if fine if that doesn't work. 

There is a nice assortment of produce right now so please let me know if you want some.

Don't go until you hear a confirmation from me, just to make sure there's still plenty left. 

Look for the clip board next to the produce.  Sign in.  Bring your own bags. 

Don't ring the door bell or anything, just sign in, take some food, and leave.

Right now there is no garden work at the Holladay A Garden.

We do need help in Holladay B Garden, however. 

You can come later and help in that garden or any of our WEST side gardens, which are also very demanding right now... especially West Jordan and South Jordan A, B & C Gardens. 

A lot of the produce you are eating at my home right now is coming out of our 3 South Jordan Gardens.

Thank you so much for helping us in any of our 14 gardens this year!

Harvest & Garden work, Come and help and you'll be rewarded well!

EVERY Tuesday night: 6:30 - sunset: South Jordan Garden Blitz & Harvest Distribution

Held every Tuesday evening through September 1st (may be longer).

(We start at So Jo A, then go to So Jo B, then go to So Jo C Garden)


This Wednesday 8 - 9:30 am: Holladay Garden Blitz & Harvest Distribution

Plan to come and check in with me first, here at the Holladay A Garden (my home).

Many hands really do make the work go fast and easy! 

  • We ask for your help for at least 15 - 30 minutes, or longer if you can stay.
  • Come anytime during the evening.
  • If you'll RSVP, we'll reserve a portion of the harvest for you!
  • Type of work to do:  Harvest crops and help us weed
  • Even if you can't kneel down and work, there is still plenty you can do to help us out, so come! 
  • If you can't come and work during these dates and locations, please email me and let me know when you can come and work and pick up food.



Harvest this week includes cucumbers, carrots, plums, yellow squash, zucchini, jalapeno peppers and more!

South Jordan C Garden, is just a 5-minute drive from So Jo A & B Gardens. 

RSVP if possible so I know how much food to bring for everyone.

Join us ANYTIME during the evening and stay as long as you like.

About our 3 "So Jo Gardens"...

as we like to call them:  They are the largest of our 14 gardens and are producing a LOT of crops.
I will be doing weekly "So Jo Garden Blitz Parties" since these 3 gardens need a lot of consistent attention this summer.
As we are able to stay in control of these gardens AND get enough people to help us, we'll send a crew over to work in the West Jordan Garden as well.
Let me know if you'd like to work there.

We are growing Melons and Winter Squash in many of our gardens this year.  I'm trying to get a bunch of signs posted to remind everyone to "DON'T PICK THESE CROPS!"

It's very understandable why people pick these crops since this is what they look like in the grocery store, however, "home-grown" vrs "store-bought" MELONS and WINTER SQUASH are very different! 
We'll let you know when we are ready to pick these plants, just keep your eyes open and don't let anyone pick any of these until you hear from me.  We are watching these plants very closely.

Asian Veggie Rice Bowl

The photo above has collards rather than squash and no eggs or onion. Very simple and delicious!

Serves 4 - 6 

1/8 c. Olive Oil

1 Zucchini or Yellow Squash, medium, thinly sliced
1 Yellow onion or green onions, thinly sliced
3 eggs, whisked together
2 c. Cooked White or Brown Rice OR Brown Rice/Quinoa Combo

My 3 favorite sauces to choose from:

1)  ¼ - ½  c. Mae Ploy Sweet Chili Sauce

2)  ¼ - ½  c. Teriyaki Sauce

3)  Yellow Curry Thai Sauce (I purchase this sauce from my favorite Thai Restaurant: Pawitt's Royale Thai Cuisine in Holladay)

In a hot skillet, add ingredients in the order given
Everything cooks in less than 5 minutes!
Don't overcook.

Optional:  Add these before adding the sauce: Cooked chicken, pork, pineapple chunks, green onions, sliced green/red peppers, etc.

Cook Rice, Quinoa one of 3 ways: 1) Pressure Cooker  2) Skillet on a stove  3) Rice Cooker

I cook the two grains together

In a pressure Cooker:
2 c. Brown Rice
1/2 c. Quinoa
4 c. water

Bring to 8 lbs. pressure

Turn off burner and cook for 25 minutes
Let cool
Put in clear, plastic 8 - 12 oz. containers
Store in refrigerator until ready to use
Freeze ingredients if not used within 2 - 3 days
